Tamale Pie for National Pie Month!

February is National Pie Month and you probably expected a recipe for chocolate pie - but that's so predictable!

We thought February called for something spicy and substantial, like this Tamale Pie! It's fast and easy to make with simple ingredients - perfect for those extended weekend camping trips when you don't feel like spending a lot of time in the RV galley.

Of course, you can raise the chile heat factor by the type of chile powder you use! See the recipe at the bottom for making your own chile powder.

3 T. Chile Powder**

¾ C. Yellow Cornmeal

1 ¼ C. Milk

1 egg, beaten

1 lb. Ground beef

1 small onion, chopped

2 cloves garlic, diced finely

1 – 16 oz. can of diced tomatoes

2 cups Whole Kernel Corn

1 Cup Cooked Pinto or Kidney beans

½ Cup drained black olives

1 Cup Grated Cheddar Cheese

Directions:

Mix the cornmeal, milk and egg together.

In a skillet, brown the meat and add the onions, sauté until the onions are soft. Stir in the diced tomatoes, corn, beans, chile powder and olives. Cook for another 5 minutes.

Stir in the cornmeal mixture, mix well then place into a 2 ½ quart casserole dish.  Bake at 350 degrees for 1 hour and 15 minutes. Remove from oven and top with the cheddar cheese. Bake until cheese has melted.

** Chile Powder Recipe

1 part dried ground Cayenne, Piquin or Chile de Arbol depending on your taste
1 part dried Pasilla or Ancho chile 
5 parts ground red New Mexico Chiles
2 parts garlic powder
1 1/2 parts ground cumin
1 1/2 parts ground oregano

Ground red New Mexico is widely available these days and inexpensive - don't substitute!
