Classic Red Chile Sauce

Classic Red Chile Sauce

Red Chile Sauce

½ Cup Red Chile Powder

1 tsp. Cumin

½ tsp. garlic salt

3 T. Flour

2 T. Vegetable Oil

1 medium onion, chopped

2 cloves garlic, chopped

2 - 3 cups water

In a 2 quart saucepan, heat 2 tsp. vegetable oil on medium heat.

Add onion, garlic, and saute for about 5 minutes or until the onion is translucent.

Stir in the oregano, cumin and flour.

Stir for about 4-5 minutes until the mixture begins to bubble, and turns a light brown, then remove from heat.

In a separate bowl, mix chile powder & water until it is blended smoothly.

Combine the chile mixture with the flour/onion paste roux, stirring with a whisk to prevent any lumps.

Return the pan to medium heat and bring the sauce to a boil. Stir constantly until bubbles form.

Once the sauce begins to boil, reduce heat to low simmer for 15 minutes.

The sauce should be smooth and thickened slightly. If it’s too thick add a little water.
