Marinated & Grilled Spring Leg of Lamb

Marinated & Grilled Spring Leg of Lamb
Spring is the time to enjoy lamb and it happens to be popular in New Mexico! This recipe is great for when you're on the road in your camper and don't have an oven or don't want to cook inside. For a get-to-gether, you can grill the lamb 2 hours ahead; just hold it under foil at room temperature. When ready to serve, place back on a hot grill for 2 minutes per side.    Marinated Leg of Lamb Slow...

Jalapeno Popper Dip for Superbowl Sunday!

Jalapeno Popper Dip for Superbowl Sunday!
If you love everything about jalapeno poppers except the hassle of making them, then this recipe is for you! This was served recently at a holiday party and was a huge hit. I liked it best with the green and red pepper strips but it also goes nicely with crackers and chips. Better make a double batch if you're having a Superbowl Party because it will disappear quickly! 16 oz. Package of Cream Cheese, softened 1 Cup mayonnaise 1/2 Cup Shredded Monterey Jack cheese 1/4 Cup Chopped...

If your family is like mine, turkey sandwiches get old after a day so I’m always on the lookout for a good recipe using left over turkey. Bub's Green Chile Stew with Mesquite Smoked Turkey

Bub's Green Chile Stew with Mesquite Smoked Turkey
Green Chile Stew is my husband's favorite! It's traditionally made with pork but we have come to prefer it with mesquite smoked turkey. He smokes a turkey breast about once a month and always makes a pot of green chile stew with half of it. He also makes it with grilled chicken which is excellent as well.  We've been known to mash up the potato chunks and use the leftover stew as a base for huevos rancheros the next morning! Just reduce the liquid a little and it's great! 1/2 tu...

Cool Gazpacho for a Hot Day
No one wants to cook on a hot day! Why not try a cool refreshing gazpacho? It's sort of like a salsa soup and you can make it as spicy as you like. Sourdough adds an interesting flavor. 3 Cloves Garlic (Minced) 1 medium cucumber, peeled and seeded cut into 1/4" dice  2 swe...
